requested Recipes:
Baked
Cheese Blintz
4 oz cream cheese
8 oz cottage cheese
1 egg yolk
1 tbs sugar
3/4 tsp vanilla
Blend together and set aside.

3/4 cup sour cream
1/4 cup milk
1/4 cup melted butter
1 tsp lemon peel
1/4 cup sugar
1/2 cup flour
1 tsp baking powder
Blend and pour 1/2 of batter into
greased
9x9 pan.
Drop cream cheese mixture around
&
pour remaining batter over.
Bake at 350 deg 45 minutes.
Pumpkin
Streusel Bread
Pudding
Makes 12 servings
Cinnamon Streusel (below)
1 cup brown sugar
1/4 cup flour
3 cups milk
1 tsp ground cinnamon
1 tsp vanilla
1/2 tsp ground nutmeg
3 eggs
1 can (15 ounces) pumpkin
6 cups cubed day-old french bread
1/2 cup currants or raisins
Cream or ice cream, or Bourbon
Sauce,
if desired
Heat
oven to 350 deg. Grease
rectangular
baking dish, 13x9x2 inches.
Make Cinnamon Streusel; set aside.
Mix
remaining ingredients except bread,
currants and cream in large bowl until well blended.
Stir in bread cubes and currants.
Let
stand 10 minutes; spoon into dish. Sprinkle with streusel.
Bake
40 to 50 minutes or until knife
inserted
incenter comes out clean. Let stand 10 minutes.
Serve warm with Bourbon Sauce.
Cinnamon
Streusel
1/3 cup flour
1/2 cup brown sugar
1/2 tsp ground cinnamon
3 tbsp butter, softened
1/2 cup chopped pecans
Mix
flour, brown sugar and cinnamon in
small bowl.
Cut butter,until crumbly. Stir
in
pecans.
Bourbon
Sauce
1 cup butter
1 cup confectioners's sugar
1 egg
2 Tbs. bourbon
In
small saucepan melt butter.
Stir
in sugar and cook over medium heat, stirring until mixture
becomes glossy. Remove from
heat
and beat in the egg. Blend in bourbon.
